Quarantine Diaries: All I do is Eat + Ceviche Recipe

So, I don't know about you guys, but I'm really getting a hang of this quarantine thing. 😂  I mean you get to stay home and experiment with recipes and eat anythingggg you want.  Every weekend my quarantine buddy and I have fun with creating cocktails and eating some epic meals.  We've gotten so good at it that we've decided to put together our best and favorite cocktail recipes to share with everyone!  In the meantime, here's a little food diary PLUS my popular IG ceviche recipe.

Shrimp Ceviche Recipe
Ingredients:
1 pound of cooked shrimp with tails removed
1 bunch chopped cilantro
1 cup tomatoes 
(Roma tomatoes are ideal, but any kind works.) 
1 cup cucumber
1/2 chopped red onion
3 small hass avocados
juice from 1 lemon
juice from 2 limes 
1 jalapeño (optional)
salt and pepper to taste


Disclaimer: I am not a recipe kind of cook.  I am more of a taste/look kind of cook, so please bear with me and  my measurements. 😅

Now, this meal is SUPER easy!  I would recommend chopping the shrimp into 3 pieces if they are medium to large in size.  Chop everything and mix in a bowl.  Juice lemons and limes, add salt and pepper, and mix.  Let it sit for about 10-20 minutes to let the marinade do its magic. 

Tips:  I would recommend cutting and adding the avocado last to avoid browning.  If you prefer a bit more marinade, I would juice one more lime.



And viola!  It's as easy as that.  

I love to eat this with fried plantains, over a tostada, or with chips.
